Probably the best start in processing L. vannamei comes with proper post-harvest handling. The first step is to evaluate ponds for presence of soft-shelled shrimp. As ponds are harvested, farmers and processor agents should pull representative samples and check for percentage soft-shelled shrimp.

The shrimp farms comprise 500 hectares of ponds in a total land area of 1,007 hectares. Combined, the ponds can produce about 50,000 Metric Tons of shrimp annually. The shrimp processing facility in Pulilan, Bulacan can process 60 Metric Tons per day of shrimp raw material.

L. vannamei is the most important shrimp species cultivated in the Americas and is the major species of shrimp produced in the western hemisphere. Approximately 95% or about 132,000 MT of the shrimp produced in 1998 was L. vannamei. In 2001, world production of L. vannamei was 184,353 MT with a value of US $1.13 billion (US $6.15/kg; FAO, 2004).

P. vannamei weighing 30–45 g will spawn 100 000–250 000 eggs of approximately 0.22 mm in diameter. Hatching occurs about 16 hours after spawning and fertilization. The first stage larvae, termed nauplii, swim intermittently and are positively phototactic. Nauplii do not feed, but live on their yolk reserves.
